Large Row of Noodles
1.
Partially prepared materials
2.
A large row of repeated beating with the back of a knife (it is very important, the beating is in place to lose the firewood) one to one or two times as big
3.
Marinate with egg white, one teaspoon of pepper and one teaspoon of salt for ten minutes, mix with half a teaspoon of glutinous rice flour (because there is no sweet potato starch, so use glutinous rice flour instead), continue to marinate for 10 minutes
4.
Put oil in the pot, cut the green onions into sections and burn them together, 80% of the heat, and put in the marinated large rows. Fry it slightly yellow and then remove it (because it needs to be fried twice, this was the first time it was fried for a while).
5.
This is the picture prepared for the second re-fry (the second time it needs to be burned in a large fire), so that the outside is good, but the inside is still very tender.
6.
Put the green onions and the large row into a bowl and reserve for later use, pour out all the oil, and stir-fry the ginger slices over low heat. While the pot is hot, add a tablespoon of light soy sauce, half a tablespoon of soy sauce (I accidentally poured too much soy sauce, more than half a tablespoon), rock sugar, mix with stock or water (it’s more water than usual for roasting meat, because To be used as a pasta), boil. (Be sure to enlarge the row after boiling). Add the large chops and fried green onions, then add the star anise, boil over high heat and simmer until crispy. Add salt and sugar in the middle (if you think the amount of rock sugar is enough before, don't add sugar)
7.
One minute before the large row is ready, put in the right amount of chicken essence (the chicken essence is not good for your health if you put it too early). The large row does not contain juice, the salt should not be too heavy, and a little salt is added when the noodles are cooked. When you eat, you don’t need the water for boiling the noodles, and the soup is all cooked soup. The noodles should be boiled in a separate pot. After the noodles are finished, put them in a bowl and pour in large rows of juice.
