Lazy Mapo Tofu
1.
Cut the four corners of the bottom of the tofu box, let air in, and it will be easy to demould.
2.
Scratch the plastic film on the surface and buckle it upside down on the chopping board, gently pinch the packaging box to further separate the packaging material from the tofu.
3.
Cut the tofu into cubes of about 2*2CM, sprinkle a little salt and soak in water to remove the beany taste, and let the tofu marinate slightly.
4.
Cut the shallots into chopped green onions.
5.
Add about 80 grams of water to half a bag of Mapo tofu seasoning (you don't need to pay too much attention to the amount of water), and mix thoroughly.
6.
Add a little salt and cooking wine to the minced meat and stir in one direction.
7.
Heat the pan with cold oil to spread the minced meat.
8.
Add the drained tofu cubes and stroke gently to avoid breaking the tofu. Add a little water to boil. This step is mainly to cook the meat.
9.
Pour in the prepared seasoning paste, stir-fry gently, and collect the juice over high heat.
10.
Sprinkle with chopped green onions and start!
Tips:
1 I used to burn a box of tofu (300g) with a packet of seasoning according to the instructions on the package. The salt was terribly salty, so this time I used half a packet and it still felt a little salty. So you can't copy the recipe, after all, everyone has different tastes.
2 Make the movement as gentle as possible, and don't crush the tofu.
