Lazy Version Sweet and Sour Pork Ribs

Cut the ribs into pieces, wash them, blanch them in boiling water to remove the blood, then wash them in warm water and drain the water for later use.

Mix 1 catty of ribs, 1 tablespoon of cooking wine, 2 tablespoons of sugar, 3 tablespoons of vinegar, 4 tablespoons of soy sauce, 5 tablespoons of water or stock to make a sauce. Stir it with chopsticks to dissolve the sugar. This is the 12345 principle mentioned in the title. According to this ratio, the taste is just right.

Put a little oil in the pan, put the drained ribs in the hot oil and fry. If you like dry and fragrant, you can fry more. If you like soft and tender, don't fry for too long, otherwise it will be too dry.

Then add the sauce prepared in 2 above. After the high heat is brought to a boil, change the heat to medium and low heat and cook for 40 minutes to an hour, depending on the size of the ribs. When the ribs are cooked, turn on the high heat to collect the juice. I boiled it for about an hour and there is still a lot of broth, but it is already delicious. If you have time, you can wait until the broth is completely dried, and if you like, you can also hook a little gorgon to collect the juice.
