Lees Fish

Scrape the scales first

Cut the knife right above the fish, don’t cut all

Take out the internal organs

Wash and set aside

Prepare a clean big box with a lid

Put the fish in the box

Prepare another box and put lees, salt, wine in it

Spread the lees evenly on the fish, one by one.

Finally cover and marinate for a few days

After marinating, take one and steam for 12-15 minutes. It should not be too long, because the fish meat is too old to affect the taste.
Tips:
Fish should not be steamed for too long, you can also use a microwave oven! Salty and light can be added according to personal preference.
