Lemon Hot and Sour Chicken Feet

Ten chicken feet, clean.

Remove the nails.

Cut into small pieces, I am a chicken feet and divided into three pieces.

Cool chicken feet under cold water, add green onion, ginger slices, cooking wine, and pepper.

Bring to a boil on high heat, turn to medium and low heat and cook for ten minutes, then turn off the heat and simmer for seven or eight minutes.

The cooked chicken feet are washed with warm water to clean the surface foam, and washed several times with cold water.

Receive a basin of cold water and add ice cubes to it. The cooler the better, add the chicken feet and soak for more than half an hour. The outdoor temperature in our northeast was minus ten degrees below zero. I didn't add ice cubes and put the basin directly outside with the lid. The chilled chicken feet have a chewy texture and a chewy texture.
