Lentil Braised Noodles
1.
Preparation: Wash the lentils, cut into sections, drain and set aside; cut the pork into small pieces; cut the green onion into chopped green onions, chop 5 garlic cloves, and a few peppercorns; noodles melted (I used the frozen noodles, you can roll them with fresh hands) Surface) spare
2.
Heat oil in a pot, add half of the minced garlic, saute the pepper
3.
Add the pork and stir fry until the color changes
4.
Add 5 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, and 1 tablespoon of sugar, and stir-fry evenly
5.
Add the lentils, green onions, and the remaining half of the garlic, and stir fry together until the lentils skin is slightly wrinkled (the lentils must be fried for a while, and they are cooked. The saponin in the skin of the lentils and the hemagglutinin in the beans will cause a strong stimulus to the gastrointestinal tract , Lead to poisoning, patiently fry for a while until the skin is wrinkled and it is cooked)
6.
Pour in boiling water, bring the lentils and meat to a boil, turn to medium-low heat and simmer for 5 minutes, and prepare half a bowl of broth (you can taste the salty and light, if it is not flavorful, add some dark soy sauce)
7.
Spread the top noodles evenly, continue to cover and simmer (turn over the bottom noodles after 5 minutes to prevent adhesion, use a spatula to shovel the bottom of the pot, don't boil it dry)
8.
After simmering for 10 minutes, see that there is still a little soup at the bottom of the pot, pour in half a bowl of soup just prepared, sprinkle with half a teaspoon of salt to taste (if the soup is salty enough, you can leave it without salt), stir well, and turn Continue to simmer on low heat
9.
(Probably less than 10 minutes) Watch the soup dry, and just take it out of the pot
Tips:
1. I don’t like to eat fatty meat, so I use lean pork. If you can eat fatty meat, it will be more fragrant to replace the meat with pork belly.
2. The large lentils I use can also be replaced with slender beans, which are also delicious!
