Lentil Braised Noodles

Prepare lentils, the names and varieties vary from place to place. Treat clean and control water.

Buy ready-made noodles (noodles)

Add water to the steamer, boil, shake the noodles and place in the steamer to steam for 10 minutes (cover)

After steaming, take it out and shake it with chopsticks, and steam for another 5 minutes. Then mix it with sesame oil, put it in the pot first, don't take it out.

Cut the green onion, ginger and garlic

Bowl of juice: Cut the garlic (paste it is best), pour a little vinegar, add some sesame oil, and add some boiled water. (Eat noodles)

It's best to use pork belly to cut and set aside

Add oil to the pot, stir-fry the meat to change its color, add green onion, ginger, garlic and rice wine, and fry the aroma

Put the lentils and stir fry with soy sauce

Heat the water so that the water is flush with the lentils. After the high heat is boiled, cover the pot and leave it on medium heat for about 10 minutes.

When the soup in the pot becomes less, add salt

Then put out a bowl of soup for later use.

Spread the steamed noodles on the lentils, cover the pot and simmer for a few minutes over medium heat

Shovel the lentils with a spatula to see if the soup is less, pour the soup in the bowl (step 12) evenly on the noodles

Cover the pot and simmer on medium heat for 5 minutes, turn off the heat when there is a little soup

Serve on a plate, pour in garlic juice, mix well and eat.
Tips:
When simmering noodles, always pay attention to the condition of the noodles and soup. When the soup is almost dry, turn off the heat immediately, because there will be some soup when stirring.
