Lettuce Soup Wanton

Prepare the meat, ginger, green onions, and lettuce. Clean the pork forelegs. Peel and chop the pork into puree. Peel the ginger and chop into ginger paste. Mince the green onions and set aside.

Add the mashed meat, minced ginger, and chopped green onions to cornstarch, sesame oil, fish sauce, and 10 grams of salt. Stir it evenly. You can also add an egg. But today I ate the eggs, so I won’t have to go back.

Pour clear water into the pot and bring to a boil, add the wontons, wait until the wontons are all floating, cook for about 3 minutes and then pick up

At the same time as step 5, bring the broth to a boil, add the remaining 5 grams of salt to a suitable taste, add the lettuce, and the lettuce is slightly blanched, then turn off the heat and put it in a bowl.
