Liangpi

1. 500 grams of flour, about 3 grams of salt, appropriate amount of water and make a relatively hard dough. Then wake up for about half an hour.

2. Starting to wash the noodles is actually kneading the noodles in water. Put some water in the basin, not too much, and then put the dough in the basin and knead vigorously.

3. Knead until the water becomes a white batter, pour the batter into another bowl and set aside, then fill the dough with some more water and continue kneading. This is what it looks like after washing it three times. It takes about five or six times to wash it.

4. Sift all the washed batter twice. Then cover with plastic wrap and put it in the cooler to cool and settle for 7-8 hours.

5. Put the final kneaded gluten into a plate and steam for about 20 minutes. After steaming, let cool and cut into pieces for later use. This is gluten.

6. Remove the top water from the deposited batter. Then stir well.

7. Prepare two flat-bottomed plates and brush a little oil on the bottom. Then pour a spoonful of batter into it, and then turn the plate to spread it evenly.

8. Put an appropriate amount of water in the pot, bring it to a boil, turn to a low heat, put the plate with the batter in it, and steam for 3 minutes on low heat. During the steaming process, prepare the batter in another plate.

9. After the steamed pasta is taken out of the pot, quickly put it in a basin of cold water to let it cool down. Then gently peel off the dough. When putting the dough, put a little oil on each layer to prevent it from sticking. After the dough is ready to cool, you can cut into strips, add seasonings, and mix well.

Tips:

1. I just started to wash my face, the face was a little loose in the first few times. Don't worry, it will wash out the complete gluten at the end.
2. The thickness of the dough can be according to your preference. If you like thicker ones, put more batter.
3. The delicious noodles are inseparable from good ingredients. The side dishes are: cucumber shreds, bean sprouts, coriander, and gluten. Seasonings are: garlic juice, light soy sauce, vinegar, spice water, chili oil, sesame oil. I did not put the sesame paste, but mixed the peeled fried peanuts and cooked sesame seeds into the dough. The taste is better than the sesame paste.
4. How to make the spice water: put a dozen peppercorns, two star anises, and a small handful of fennel together in the pot, add a large bowl of water, after the high heat is boiled, turn the heat to a low heat and cook for ten minutes, turn off the heat and let cool Filter out the spices and use.
