Light Hericium Vegan Soup

Take 2 Hericium erinaceus, about 30 grams.

Add water to the Hericium edodes and soak.
3.
Squeeze out the water.
4.
Change the water, soak and wash again. Repeat for many times to reduce the bitter taste of Hericium erinaceus.

Cut off the old roots of Hericium erinaceus with scissors.
6.
Tear the Hericium erinaceus after soaking into small flowers.
7.
Take out the soaked Hericium erinaceus. Wash the Agaricus blazei Murrill, soak, and dry the red dates and longan.
8.
Put all the ingredients in an electric cooker, cook until the Hericium erinaceus is soft and rotten like tofu, add mung bean sprouts and cook.
9.
Add the right amount of salt and it's done.
Tips:
Hericium erinaceus has a bitter taste and needs to be soaked repeatedly to remove the old roots to reduce the bitter taste.
