Loofah Scrambled Eggs

Wash the loofah with water, peel off the skin, and then cut it into diagonal pieces.

Put the cut loofah into a large bowl and add 1 teaspoon of salt to marinate for 15 minutes. This step can prevent the loofah from turning black.

Next, beat 2 duck eggs in a bowl, add half a tablespoon of salt and break them up.

In another oil pan, pour the marinated loofah and stir-fry until soft.

Pour the oil in the hot pan, pour in the egg mixture and stir gently with chopsticks, during which time you can turn the bottom of the pan slightly to accelerate the solidification.

Use a spatula to cut the duck eggs into small pieces and turn off the heat immediately after they solidify.
7.
Pour in the fried duck egg cubes and stir-fry evenly.
