Lotus Seed Bun

Take 500 grams of flour and add 5 grams of yeast powder.

Slowly add warm water (not exceeding 35°C) to the flour several times, and stir gently with chopsticks to form a floc.

Knead it into a smooth dough with your hands, cover it and leave it in a warm place to ferment to double its volume.

Roll the lotus seed paste filling into small balls and set aside.

Take out the fermented dough and knead it well to exhaust.

Take out the dough and roll into long strips.

Divide into even small pieces, round and press flat and roll into skins.

Take a piece of skin and put the filling in the middle of the skin.

Squeeze it in a circle and wrap it into a bun shape.

After wrapping everything up, put it upside down.

Put it in the steamer, cover and let stand for 15 minutes.

Steam on high heat for 25 minutes, turn off the heat for three minutes and then lift the lid.

Take out a plate and let it cool slightly. Take a drop of red food coloring and mix thoroughly with water. Dip the head of your chopsticks to print a red dot on each lotus seed paste package and decorate it.
