Mango Bagel

Pour the ingredients except butter in the main ingredient into the cook machine and stir.

Add softened butter when mixing into a preliminary dough.

While the dough is being stirred, prepare the mango puree. Peel and core a mango, crush it with a spoon, fry it in a pan to remove moisture, or turn it in the microwave on medium-high heat for 5 minutes to get a thicker mango puree.

Chop the dried mango into small pieces. In fact, you can cut it a bit smaller.

When the dough becomes soft and smooth, add dried mango and mix for another two minutes to make it evenly distributed.

Divide into six portions, cover with plastic wrap, and allow for 15 minutes.

Take one of the dough and press flat.

Roll out into an oval from the middle to the ends.

Flip and turn it horizontally, and smear mango puree. Just reach the half position, it will overflow easily and not easy to knead. Although the color is a bit indescribable😂. But after it's done, it's really fragrant.

Roll up from top to bottom, knead the joint, and roll one end to squeeze it to make it easier to wrap the other end.

Kneaded and wrapped, it becomes bagel dough.

Sort out the remaining dough one by one.

Ferment in a warm and humid place for about 25-30 minutes. I set the oven to 28 degrees and put a bowl of freshly boiled water to increase the humidity.

Put the sugar and water in the sugar water into a pan to boil, add the fermented bagels, and blanch the front and back for 30 seconds.

The surface of the blanched bagel will be uneven after a while, it doesn't matter, this is normal, and it will be round and plump after baking. Put it into the oven immediately.

200 degrees, 20 minutes, upper and lower fire, middle level.

The temperature difference of each oven is different, please adjust the temperature by yourself, the golden surface is better~
The freshly roasted bagels are crispy on the outside and soft on the inside after they cool slightly. After a few hours, the skin will be slightly wrinkled, and the taste will become firm and tough.
