Mapo Tofu

Cut the tofu into cubes, put an appropriate amount of edible salt and marinate in cold water to make the tofu less fragile.

Prepare minced meat, minced green onion, ginger, garlic, green onion leaves, and cooked peanuts and crush them into minced pieces.

Pour the marinated minced meat into the pan and fry until it is browned, then set aside. The minced meat needs to be marinated for a while, with cooking wine, a spoon of salt, light soy sauce, and starch.

Pour appropriate amount of oil into the pot, add green onion, ginger, garlic, three spoons of Handan bean paste, minced red pepper, and saute.

Pour half a bowl of warm water into the pot and boil.

Pour the tofu into the pot, and gently slide the tofu with a spatula. Make it evenly colored.

Pour in the fried minced meat and crushed cooked peanuts.

Tumble the tofu cubes slightly, add three teaspoons of sugar, one teaspoon of thirteen incense, and pepper to the pot. Cook for five minutes on medium heat to collect the juice. Serve it out and enjoy it!
Tips:
You must use Handan Douban Sauce. Mapo tofu has a great taste. The secret is to add cooked peanut kernels, it tastes fragrant when you eat it. Those who like to eat sesame can also add cooked black sesame or white sesame.
