Mashed Potatoes with Sauce and Seasonal Vegetables

1. All ingredients: wash and steam the potatoes, cut the vegetables into the same strips; mince pork, green onion and ginger for later use;

2. Press the cooked potatoes into a puree; use 2 tablespoons of hot water to melt half of the chicken soup and add it to the mashed potatoes and stir evenly

3. Place the mixed mashed potatoes in the middle of the big disk and shape it into a volcano, leaving a small depression on the top of the mountain;

4. Fork the various cut vegetables and place the color code around the mashed potatoes

5. Add a little oil to the wok and saute the chopped green onion and ginger, add the minced meat and fry to change the color

6. Cook in the cooking wine, add a little soy sauce to taste

7. Add 2 tablespoons of "green onion mate bean paste" and stir fry until fragrant

8. Add an appropriate amount of water to make it thinner, and let the heat on for 3-5 minutes until the color is bright

9. Pour the fried sauce on the mashed potatoes, and finally add the yolk of an egg to the crater.
