Tips:

1Matcha powder I use Isuzu. The taste and color of each matcha powder are different. Please use it in moderation.
2 Due to personal reasons, I was in a hurry to go out, so that the first serve was not in place, causing my bread to be not so close to the ideal height. However, the tissue is already very soft and the taste is good.
3 The amount of protein can be reduced to 40 grams, increasing the amount of water. The overall temperature of this dough is relatively warm, so you need to use hand powder for shaping.
