Wash 250 grams of rhubarb and add 275 grams of water to soak for one hour. I didn't add sugar. I will use powdered sugar later as the sticky powder for the "donkey" to roll, so I won't put sugar in the front. The traditional white glutinous rice donkey roll is made of boiled soybean noodles. This donkey is already yellow, so let's roll the white powder.

Put water and rice into the inner tube of the bread machine to start the rice cake program. Without a machine, I had to buy rhubarb rice noodles, add water to soften them, and steam them in a pot. The bread machine can be steamed and then whipped by kneading, which is really convenient! I generally don't want to buy the current flour, because I am afraid of being impure, and even more afraid of being ground with bad rice. In fact, this feeling of distrusting others is not good at all, torturing each other, but the reality is ruthless, alas.

It takes about an hour and a half for my bread machine to make rice cakes. It comes out and it is kneaded and chewy and can make rice cakes. It is too suitable for my taste. Take it out and put it on a table sprinkled with powdered sugar and knead it into a ball. Can be kneaded into a ball, slightly sticky, this is the hard and chewy rice cake. I like very soft and glutinous ones. When steaming is needed, add more water. I think it can add 300 grams of water.

Roll it into a large piece with a thickness of 3-4 mm. Do whatever you like.

Find another board, cover it with plastic wrap, and spread the red bean paste on it, which is probably a little smaller than the pasta.

Pick it up gently, buckle it back on the dough, and remove the plastic wrap. Trim it a little more and spread it evenly. In fact, I used the dry bean paste filling this time and just spread it directly on the dough. This method is more suitable for softer fillings.

Roll up, dip in powdered sugar, and cut into pieces. This kind of hard one is particularly easy to operate, much easier than the soft one. That is, if you can't digest it, or don't like the hard one, let's make it soft and sticky.

This red bean paste is homemade and sugar-free, it is just right to eat according to my taste, after all, it is also covered with powdered sugar when kneading the dough. If you like sweetness, you can use sweet bean paste.
