Millet Waffles

Pour all-purpose flour, salt, sugar, oil, and yeast into a basin and stir evenly. Salt and sugar will inhibit the activity of yeast, try not to let yeast contact.

Beat in an egg and pour in the millet porridge at the same time. When pouring the porridge, don't pour it all at once, pour it little by little, and stir while pouring it. I originally used 200 grams of flour. When I poured the porridge, I poured too much, so I could only add more flour.

After mixing it into a floc, you can start to knead it, just like kneading bread and steamed buns. Friends who don’t know how to knead can refer to "Hand Kneading Method for Bread Dough". You can also use a chef's bread machine to knead the dough.

Knead the dough until it is smooth. After rounding, cover with plastic wrap and ferment at about 28°C until it is 2~2.5 times larger.

Use your fingers to soak the dough and poke holes in the dough. It does not rebound or rebound slowly, and does not collapse. The resilience is almost gone, and the collapse is too much.

Divide the dough and round it. I have 50 grams and 25 grams of dough respectively. Cover with plastic wrap or wet gauze and relax for 30 minutes. The wet gauze should not be too wet, soak it and wring it out.

When baking the first one, preheat the waffle maker at 4 levels for about 1 minute, and brush the upper and lower baking pans with oil. Although there is a non-stick coating, oiling will make it last longer.

Put the big dough in the center and cover the lid.

Turn over the waffle maker, the upper and lower baking trays are locked. Roast it until a lot of white smoke (moisture) is emitted, and then turn it back to the front.

Turn it to the front and bake it for about 1 minute. After the aroma is bleached out, you can open the lid. In the middle, you can check the coloring situation at any time. If you are not satisfied, cover the lid and bake for a while.

Just bake 4 small doughs in one oven. The operation method is the same, except that there is no need to preheat it.

Tips:
1. Millet porridge is a substitute for water or milk. The thickness of the porridge itself greatly affects the amount of use. The water absorption and moisture content of the flour are also an influencing factor. Therefore, when adding millet porridge, it must be added little by little. Pour it into the flour all at once.
2. The dough is better if it is softer, just knead it until it is smooth, without having to leave the glove film.
3. The waffle maker is a flip type, and the firepower is more even. The degree of coloring can be checked at any time during baking, and the coloring can be released when the color is satisfied.
4. The unfinished waffles should be sealed and frozen, and thawed before eating, and the waffle maker will preheat and bake for about 20 seconds to immediately restore the crispy outside and soft inside.
