Minced Meat and Old Tofu Version of Meatballs

For a pound of pork belly, add the right amount of ginger. I bought fresh ginger for less than 0.8 yuan. Mince the ginger first, then chop evenly with the meat filling.

Tofu is either 2 yuan or 3 yuan, it is old tofu. Prepare Haitian soy sauce, salt, black pepper, water starch (flour + water. The ratio of 1:2 is almost the same)

Knead the tofu into minced pieces, put the minced meat together with the tofu

Add 2 to 3 spoons of soy sauce. 2 to 3 spoons of vegetable oil. 2 teaspoons and a half of salt. Add pepper in an appropriate amount for personal taste. Stir in one direction clockwise for 2 minutes,

Water starch was added in 3 times. Stir in one direction for 2 minutes each time. Then add water starch. Stir for another 2 minutes. Add water starch into the minced meat in 3 times, remember. This way the minced meat will be very tender,

This is the final product that is stirred to the end, very vigorous,

Rub the minced meat into the size you like, and then deep-fry or steam it (steam it when cooking, save gas). This way it won't be messy when it's fried. PS When you pinch the balls, the palms of your hands are soaked in water so that the balls are better shaped and not so sticky.

After the oil has heated up completely, add the meatballs and fry them until golden brown. Remember to turn the pot back after the fire is formed. Fry on medium heat, turning the pot a little less.

If you are afraid that the meatballs will not form and stick to the pan, you can fry them for a while and then place the pan at an angle, turn off the heat, and let it dry for about 1 minute. After a while, the meatballs on the bottom of the pot will roll to the bottom with a light spatula. If the shovel does not move, let it cool before shoveling. There is no such problem with non-stick pans. I bought a stainless steel pot. This way the croquettes will not be deformed.
