Monkey Mushroom and Cordyceps Chicken Soup

Soak the Hericium erinaceus with rice washing water for 1 hour

Pour out the rice washing water, squeeze and wash with clean water repeatedly until the water becomes clear

Then squeeze out the water, tear it up and set aside

Soak the bamboo fungus in light salt water for later use

Soak lotus seeds and cordyceps flowers in clean water for 5 minutes and rinse off

Rinse the chicken repeatedly and cut off the lymph under the neck

Pour water into the pot, add chicken, ginger slices, cordyceps flower, lotus seeds and hericium erinaceus, close the lid, and boil on high heat for 1 hour

Add the cut bamboo fungus, boil for another 20 minutes, and add the salt at the end.
