Mooncakes with Five Nuts

Let's make the crust first, because the crust needs to stand for 2 hours. Mix 50 grams of peanut oil, 140 grams of inverted syrup, and 4 grams of soap. Sift in 200-210 grams of all-purpose flour and knead until there is no dry powder. Cover with plastic wrap and let it stand for 2 hours.

Let’s make the five-ren filling. This is the filling I put. You can also use it yourself. These ingredients total 300 grams. In the filling, all nuts are roasted, flour and glutinous rice flour are fried or roasted, and peanut oil is heated. Don't crush the nuts too much, they are bigger and taste better. Finely chop preserved fruits.

After mixing the nuts and candied fruits, add 50 grams of peanut oil, 110 grams of honey, and 60 grams of cold boiled water, and mix well. Both syrup and sugar can be added or not added. Anyway, I think the sweetness is enough, so I didn't add it.

Add the fried flour and glutinous rice flour, a total of 150 grams of flour. Mix well. The filling can be easily kneaded into a dough, which is an ideal state.

Let's start the package. First press the skin flat and put on the filling.

Then turn it upside down and press the skin down with a tiger's mouth.

Come here, use the tiger's mouth to drive up the skin, and close your mouth. Round the mooncakes with your palms.

Roll the mooncake in the flour, pat off the excess flour, put it in a mold, and press it into shape.

Try to press it into the baking tray and do not move it repeatedly to prevent the moon cake from deforming.

Use a watering can to spray a layer of water mist on the moon cake, not too much, to prevent the moon cake from cracking during baking. Bake at 190 degrees for the first time for 10 minutes and set.

Take out and brush a thin layer of egg mixture, and bake for 10 minutes at 165 degrees for the second time.

Brush a thin layer of egg mixture again, and bake for a third time at 165 degrees for 5-10 minutes, until the color is satisfactory.

It's done, return the oil at room temperature for 3 days before eating.
