Mr. Xiaojima’s [dried Fruit Pound Cake]

Preparations: Dried fruits are soaked in warm water for 10 to 20 minutes, dried and cut into 1.5cm blocks

Cut the walnuts into 1cm chunks and put them all together for later use

Put the butter and sugar in a basin and use a rubber knife to stir to soften them. Beat with an electric whisk at high speed for 5 minutes, and it is fluffy, white and creamy

Add egg liquid to 2 in 4 times, add one time and pass it for 1-2 minutes and then add the next time; add the fourth time, pass it for 1-2 minutes and then continue to beat it for 1-2 minutes

After the powder is sieved, pour it into the basin and stir. It needs to be stirred for 60-80 times until the powder is not visible.

Add the mixed dried fruits and walnuts to 7 and gently stir evenly

Use a scraper to put the cake batter into a 17*10 multi-purpose toast mold. Use a rubber knife to shape a shape that is low in the middle and high on both sides

Sugar water for making the cake body: 16g of caster sugar and 27ml of water together
