Mushroom and Winter Melon Chicken Soup

After rinsing the chicken wings, soak them in clean water for 10 minutes; soak the mushrooms in advance.

After the chicken wings are dried, use a knife to cut two or three knives on each side of the chicken wings.

Spread a little salt, white pepper powder and cooking wine on the chicken wings and marinate for about 15 minutes.

When marinating the chicken wings, slice the winter melon, wash the mushrooms, and remove the stems.

Take a large bowl that can be used in the microwave and place the winter melon slices on the bottom of the bowl.

The marinated chicken wings are placed on the winter melon.

Place the shiitake mushrooms on the chicken wings, and carefully pour the water used to soak the shiitake mushrooms, taking care to clear out the impurities in the water.

Add clear water, a little more clear water and a little less, no problem, less water and thick soup, more water and full soup.

Finally, sprinkle with ginger shreds.
