Mushroom Braised Pork Rice

1. Soak dried shiitake mushrooms and cut into pieces

2. Shred the onion

3. Cut pork belly

4. Without adding oil in the pot, put the pork belly and stir fry until the color changes and the oil is released

5. Add green onion, ginger, garlic, star anise and bay leaves and stir fry until fragrant

6. Add rock sugar, cooking wine, light soy sauce, dark soy sauce, hoisin sauce and chicken sauce and stir well

7. Add onions and shiitake mushrooms and stir fry until fragrant

8. Put in the shelled hard-boiled eggs

9. Add appropriate amount of water to boil and turn to low heat for 1 hour, add salt to season and collect the juice, scoop it on the rice, drizzle the soup, and sprinkle with chopped green onion.

Tips:

Don’t let the soup dry completely, it’s especially delicious when it is poured on the rice at the end
