Mushroom Braised Pork Rice

Wash the mushrooms and soak them in cold water until they become soft.

Cut the pork belly into finger-thick pieces, wash the small onions, star anise, and tangerine peel, and cut the soaked golden mushrooms into small pieces for later use.

Put an appropriate amount of oil in the pot, slightly more than the amount used for stir-frying, add onion rings in cold oil and stir-fry until golden. Sheng out and spare.

Leave a little oil in the pot, add the meat and stir-fry until the surface is golden. Add cooking rice wine during the stir-frying process.

Fill the pot with boiling water one centimeter high above the meat. Add light soy sauce and dark soy sauce, rock sugar, salt, tangerine peel and star anise. Turn to low heat and simmer for an hour.

Add the stir-fried onions, heat up the sauce and bring it out of the pan. You can leave a little bit more for the soup and eat with rice.

Use your favorite mold to shape the rice and decorate it. Serve with a tablespoon of soft glutinous and fragrant braised pork. It's too delicious to stop.
Tips:
1. Add boiled water when stewing the meat, the meat will be more tender and soft; 2. The water for stewing the meat can be boiled soaking mushrooms, and the taste will be more fragrant.
