Mushroom Chicken Rice

Put rice and water in the rice cooker.

Cooked rice.

Serve out a bowl and set aside.

Sliced shiitake mushrooms.

Dice carrots.

Chicken slices.

Put the chicken slices in a bowl, add cooking wine, salt, a little soy sauce, tender meat powder or starch and stir well, set aside.

Mince green onions and shred ginger.

Put oil in the bottom of the pot, put the scallion and ginger in the pot after the oil is hot.

Add chicken, shiitake mushrooms, carrots, and cooking wine and stir fry a few times.

Prepare half a small bowl of soaked mushroom water, pour it into the pot, add salt, chicken essence, and cook for 20 minutes.

Tips:
It’s best to use fresh shiitake mushrooms for stir-frying, which is more tender. The water used for soaking shiitake mushrooms is soaked with dried shiitake mushrooms.
