Mushroom Pumpkin Rice

Soak dried shiitake mushrooms in advance to soften, squeeze out the water before cutting. The rice is also soaked for half an hour.

The upper shell of Beibei pumpkin is cut and the inside is hollowed out.

Pour oil into the pan, add the mushrooms and diced carrots and stir fry.

Remove the soaked rice and put it in the pot.

Add salt and light soy sauce and stir well.

Put the fried rice into the pumpkin.
Put it in a steamer and steam for half an hour to 40 minutes.
Tips:
1. The pumpkin needs to be cut from one third of the way to look good.
2. The rice that can't fit in the pumpkin can be steamed in a small bowl.
3. Beibei pumpkin is a kind of mini pumpkin, which can be bought in supermarkets.
