Mushroom Xiaoding Noodles

Prepare the ingredients you need. A handful of long beans, noodles, Zhongjing mushroom and small diced sauce. The noodles are prepared according to the needs of the family's population. I prepared three servings.

Wash the long beans first, soak them in salt water for 5 minutes, remove them, and rinse them twice. The beans are clean. Then put an appropriate amount of water in the pot to boil, add 1 tablespoon of salt, 1 tablespoon of cooking oil after the water is boiled, put the cleaned long beans into the pot, cook for about 3 ¬ 5 minutes after the water is boiled, until the beans Boil soft.

Take out the beans, place them on a cutting board, let cool, and cut them into small pieces about the length of a knuckle. Place them in a basin, add salt and sesame oil, and stir evenly with chopsticks. The length of the beans is entirely up to your personal preference. If you like to eat longer, cut it longer, or you can cut it into the end to make it more delicious. There is no need to put more seasonings, just add some salt and sesame oil and it's delicious.

Put clean water in the pot, add the noodles after the water is boiled and cook. You need more water so that the cooked noodles will not be soaked, and the noodles will be strong and delicious. The noodles are cooked for 3 minutes after the water is boiled, and they are almost cooked. If you like to eat softer noodles, you can cook it for a few more minutes. I prefer to eat harder noodles, so basically it is cooked for a minute or two after boiling.

Prepare a basin of cold boiled water or purified water, and remove the cooked noodles and place them in cold water. If you want noodles to be chewy and delicious, you have to pass cold water at least once. I usually pass it twice. After passing it through the water, the noodles are still hot, and after two passes, the noodles will become cold. In summer, eating cool noodles is refreshing and tasty, chewy and elastic, very delicious.
