[my Baking Time] One of My Favorite Biscuits---egg Yolk Crispy Biscuits (caramel, Printing)
1.
Put the sucrose and a tablespoon of water into a non-stick pan. Simmer it over a low heat first, and stir with a small spoon while cooking.
2.
Turn off the heat when it is boiling.
3.
Then add another two tablespoons of water and stir slowly while adding.
4.
The boiled sucrose syrup is thicker, so pick it up with a small spoon and it will slowly flow down.
5.
Let the prepared caramel juice cool and set aside.
6.
Add powdered sugar and low powder and mix well.
7.
Sift them together into the softened butter basin.
8.
Add 1/2 teaspoon of salt.
9.
Knead together with your hands first.
10.
Just knead it like this: the flour coats the butter evenly.
11.
Then pour in the egg yolk without stirring.
12.
Add a few drops of vanilla extract.
13.
Knead the above materials together to form a smooth dough.
14.
Roll the dough into a sheet with a thickness of about 3 cm.
15.
The surface of the dough sheet should be as smooth as possible, and the baked product will be more beautiful.
16.
Put the dough pieces in the refrigerator for about half an hour until the dough pieces harden.
17.
To prepare the mold, I used a rectangular stamp mold and this small mold that can be printed.
18.
Stamp mold.
19.
Also prepare a little bit of low powder and a small brush.
20.
Take out the refrigerated noodles and let the surface of the noodles soften slightly.
21.
Dip the mold with powder.
22.
Engrave the stamp image on the large face.
23.
All the stamp graphics are engraved together first.
24.
Then use the printing mold to print the desired letters on the stamp graphics.
25.
The action should be fast, the speed of the dough softening is super fast, if the action is slow, the printing will be strenuous and the effect will be affected.
26.
In the middle of the oven, 190 degrees, about 10 minutes.
27.
If the surface is coated with caramel sauce, first use a mold to engrave all the graphics.
28.
Brush the surface of the dough with a small brush dipped in cool caramel juice.
29.
I have used both wool brush and silicone brush. It is normal for the surface to be unevenly painted. After a while, the caramel juice on the surface will naturally be evenly colored.
30.
It is also about 190 degrees in the middle of the oven for about 10 minutes. Because this surface has caramel juice, you don't need to pay too much attention to the coloring of the biscuits. The color is better when the color is baked, and the baking time is slightly longer.
