Naked oats is oatmeal, which is recognized as a healthy food in the world. In China, naked oats only grow on the plateau and dry land. They are cultivated by humans, and they cannot be watered without chemical fertilizers. Although the yield is low, it is a rare natural quality. Naked oats are low in sugar and rich in vitamin E, a famous health cereal.

In the oat-producing areas in northern my country, people’s diet composition is relatively monotonous. In some places, in winter, they can hardly eat vegetables except potatoes, and people living there rarely get sick due to malnutrition. This is common among locals. Eating noodles is related. Among the nine foods we eat every day, noodles rank first in the five most important nutrients such as protein, fat, vitamins, mineral elements, and cellulose. Oats contain special nutrients such as soluble fiber, avenin, and linoleic acid that other grains do not have. Soluble fiber increases the viscosity of food in the stomach, delays gastric emptying, and can effectively prevent a sharp rise in blood sugar after a meal. Soluble fiber can reduce the absorption of sugar in the small intestine, so it also has a hypoglycemic effect. Oat glycosides contained in soluble fiber can induce cellulose to absorb bile acids and be excreted through the intestine. The loss of bile acids needs to be replaced by cholesterol in the blood, so it can effectively reduce the cholesterol in the blood. However, linoleic acid is easily absorbed by the human body. After absorption, linoleic acid combines with cholesterol to form lipids, which are then degraded into glycocholic acid and excreted in the feces, thereby preventing the deposition of cholesterol in blood vessels, lowering cholesterol and lowering blood lipids.

Today, I am learning to make Shaanxi snacks--Jianshui Yuyu. I made one serving of cornmeal and another serving of noodles, each with its own advantages.

The first time I ate the water vegetables at my friend’s house. I pickled the fermented celery, chopped and seasoned, and topped with oily pepper. It tastes sour and refreshing in summer.

Time is tight, so I don’t have time to find a friend for some syrupy vegetables. When I went to Jianguomen Market to buy vegetables, there was an old lady selling the glutinous rice made by herself, and she happened to see that she was selling water vegetables. A pack of 2 yuan, but unfortunately she used large celery pickled. The taste is not as good as the one marinated with parsley at a friend's house.

Jiangshui Yuyu is a famous traditional snack of the Han people in Shaanxi. The fish in the water is called fish, but it is not like a fish, but as cool as a tadpole. The native dialect of Shaanxi people is called "toad bone fight", which means little tadpole. It can be eaten hot or cold, and the taste is very delicious. Summer is particularly suitable, it can relieve the irritability in summer, sour and refreshing, it is a good product to increase appetite in summer. Leaking rain can be eaten cold, slippery and soft, but when the imported is waiting to be bitten, it goes down the throat, which has the beauty of swallowing it alive. Easy to be full, but also easy to be hungry. In the summer, a stunned kid sat down to eat two bowls, loosened his belt, smoked a cigarette, stood up to eat two bowls, and then the heat was gone, and the liquid underwent the wind.
