Octopus Stewed Tofu

Rinse the tofu with clean water, then cut into thin, large pieces.

Clean the octopus, cut into appropriate sized octopus segments, cut a few cuts on both sides of the octopus obliquely, so that the octopus will be more delicious.

Finely chop green onion and ginger for later use.

Put the right amount of cooking oil in the pan, carefully put the tofu into the pan and fry until golden on both sides, pay attention to the action, and the tofu is easy to break when it is thinned, especially when turning it over. Tofu is relatively hard to break, and it is more tasty.

After the tofu is fried, put oil in the pan. When the oil is hot, put the octopus in the pan and fry until golden on both sides. When frying the octopus, do not shake the pan or turn it over, because the octopus is not cooked on one side. It is easy to break the skin, as long as you shake the pan or turn it over after frying, it will be fine.

Separate the pot and put in the right amount of cooking oil. After the oil is hot, put the chopped green onion and ginger into the pot and saute, then pour in the right amount of soy sauce and saute.

Then add half a bowl of water to boil. The amount of water should be determined according to the amount of fish and tofu. Just put the fish and tofu in. The water can be just over the fish. It should not be too much. Add a little salt after boiling. And appropriate amount of sugar, stir well.

After boiling again, put the octopus in first and simmer for a while to let the octopus taste.

Then put the fried tofu into the pot.

Cover the pot and let it simmer slowly over medium and low heat.

Prepare some chopped green onions and sprinkle them on the octopus tofu that is just out of the pot. It looks better and tastes better. If you don't have it, you can put chopped cilantro. Of course, you can leave it alone.
Tips:
1. Fry the tofu and the octopus before stewing the tofu, first for better taste, secondly, the tofu and octopus are not easy to break after frying, so it is safer to eat.
2. When the octopus is frying, do not rush to turn it over or shake the pan, otherwise the octopus will easily break and make it unsightly.
3. Do not add too much water for stewing octopus and tofu. Too much octopus and tofu will have a watery feeling and the taste is not fresh.
