Mix rye flour and salt, add brown sugar water and yeast water, stir to mix.

Then add water while kneading the dough, not adding too much water at once. Add water to the flour and knead it vigorously.

Knead the dough until you feel the dough elastic, knead it down and rebound well, and that's it. Rye flour does not form a film like ordinary flour. If there is too little water during the kneading process, the dough does not rebound well, you can keep the kneading hands wet and continue to knead. Add water in this way, it is not easy to add more.

Cover the kneaded dough with plastic wrap and ferment at room temperature for one hour.

Knead the fermented dough, knead out the air, and relax at room temperature for 20 minutes.

Tips:
To make whole rye to food, you still need to put a little sugar, and it will be delicious after pressing the slightly sour and astringent of rye flour. You can add brown sugar or white sugar.
