Oily Silver Needle

Ingredients: Mung bean sprouts.

Pinch off both ends of the mung bean sprouts and leave the middle section, which is the "silver needle".

Boil water in a pot, add a little salt and a few drops of oil.

Put in the "silver needle"

After opening, blanch for half a minute to turn off the heat.

Take it out.

Add appropriate amount of salt and white vinegar.

Stir evenly and marinate for 5 minutes.

Then install the plate.

Heat oil in a pan, add pepper and fry it until fragrant.

Pour hot oil on the "silver needle".

Tips:
1. The oil is best to choose colorless corn oil or salad oil. I use soybean oil, which doesn't look good in color.
2. Those who don't like pepper can discard it. Scallion oil can also be used.
3. The blanching "silver needle" should not be overheated, at most half a minute.
