Yesterday I chatted with my husband and talked about biscuits. I suddenly remembered the burning of shortbread when I was in high school, and I suddenly thought of eating shortbread. I found the electric baking pan early this morning and knead the noodles. To be honest, it’s really convenient to have an electric baking pan. You don’t need to be troubled by the high temperature in the kitchen. The main reason is that it’s convenient. Noodles, a pot in 3 minutes, very time-saving.

The trick to make pastry crispy on the outside is to use lard to make pastry, but friends who don’t like lard can also use salad oil instead.

Old Beijing Shortbread on Fire

1. Put all-gluten noodles in a container, add yeast and salad oil, and then add an appropriate amount of water.

2. Knead it with your hands to form a moderately hard dough and cover it with plastic wrap for 20 minutes.

3. Add low-gluten flour to salt and lard.

4. Use chopsticks to stir evenly into shortbread

5. Knead the dough well again.

6. Roll out into a large rectangular piece.

7. Spread the shortbread evenly on the large noodles.

8. Roll up from one end of the dough sheet.

9. Pinch the seal tightly after rolling it up.

10. Divide into small doughs of the same size. I made 6 in total.

11. Pinch the cuts on both sides of the small dough together.

12. The seal is facing down.

13. Roll into a beef tongue cake shape.

14. Brush the cake base with a layer of water and then evenly dip in the sesame seeds.

15. Brush the preheated electric baking pan with a layer of oil.

16. Put the raw embryos of the pastry on fire in an electric baking pan.

17. Set up an autonomous cooking program and close the lid.

18. Fry for about 3 minutes, until the top and bottom are golden brown.

Tips:

What I make is savory, and I like to eat sweet. Just add some sugar to the shortbread. The fire made with lard is very fragrant. The lard can be replaced with salad oil.
