Old Vinegar Mixed with Yuba

Soak the yuba in advance until soft.

Then wash and cut into small pieces.

Wash the carrots and cut into slices.
4.
Wash the mushrooms and also slice them.

Add water to the pot, bring to a boil, add the yuba, boil on high heat and simmer for 3 minutes, remove and drain the water, set aside.

Put the mushrooms and carrots in the pot, blanch them for 2 minutes, remove them and set aside.

Then put all the ingredients into the container, add salt and cooking wine.

Pour in some light soy sauce.
9.
Pour in an appropriate amount of sesame oil.
10.
Add appropriate amount of sugar and mix well.
11.
Sprinkle with chopped green onions at the end.
Tips:
Yuba is hard to boil soft, so it must be soaked more than two hours in advance until soft.
The reason why carrots and mushrooms are blanched separately from yuba is because yuba has a beany smell, and if they are blanched together, some of the original flavors of mushrooms and carrots will be lost.
