Old Vinegar Spinach Peanuts

Fry the peanuts in advance and let cool for later use. The peanuts should be put in the pan in cold oil, the lowest heat, if the color changes, the heat should be turned off, otherwise it will be mushy.

Blanch the cut spinach in water and change the color. Too cool, squeeze out the water.

Add the fried peanuts, vinegar, salt, and sugar, and mix well. The acidity of vinegar is different, so add seasoning according to your own taste. I like the strong flavor, so I think the sweet and sour flavor is a bit more delicious.
Tips:
The fried peanuts are soft when hot, and will be very crunchy when cooled. When they become crispy, stir in the spinach. I usually fry the peanuts one day in advance. Put more fried peanuts in an airtight container and put them in the refrigerator. They can be used for a few days. They are good ingredients for cold dishes.
