I ate cauliflower three times intermittently this week. The first time was the lard rice in Laobanzhai on Fuzhou Road at the beginning of the week. The rice was soft, with almost no greens visible, but there was a faint smell of lard in the rice; and then the casserole bacon rice that I tasted at Qiaojiazha yesterday. Said it is a casserole, but it is actually a cover. To put it bluntly, I just put the finished vegetable rice in a casserole container; there is also the organic vegetable rice made on a whim today. It uses new rice from Chongming Island, organic vegetables from Songjiang, and Spanish olive oil.

It is very interesting to recall the "side dishes" when eating cauliflower in the past few days. The first is the classic combination: Lao Banzhai's vegetable rice with a bowl of soybean bone soup; then the innovative combination: Qiao Jiazha's vegetable rice with a piece of vegetarian chicken; today it is true to the original flavor: nothing is matched.

I have always adhered to the cooking principle: cooking, eliminate all kinds of seasonings such as MSG and chicken essence, use the least amount of addition, and preserve the original flavor of the food to the greatest extent. "

1. Cut the minced garlic and break the greens into small pieces.

2. Heat the pan with cold oil, add the minced garlic and saute, add the green cabbage stems, green cabbage leaves, cook in the Shao wine, fish sauce, add sugar, salt, and stir-fry for a while.

Tips:

-Add more oil when stir-frying the vegetables. The vegetable rice should be oily to taste.



-Do not cut the greens with a knife, break them into small pieces with your hands, which is more delicious.



-Cook Shaoxing wine when the fire is high, and be careful not to be ordinary cooking wine. The cooking wine on the market is not entirely wine, it also contains ingredients such as salt and sodium glutamate (MSG), which are relatively unhealthy. I usually like to add pure Shaoxing wine in my cooking, no matter the meat or vegetable dishes will immediately become very fragrant.



-Because fish sauce contains salt, please reduce the amount of salt added.



-For nutritional considerations, please wait until the rice is half cooked before adding greens. Doing so also retains its emerald green color, which is more beautiful.



-Unplug the switch after the rice cooker trips, let the rice simmer for a while, the finished product will be more waxy and fragrant.
