Original Toast

The material of the middle kind of dough: high-flour, high-sugar-tolerant yeast. Mix the yeast with water and let it stand for a few minutes and mix well, then pour it into the high flour to form a smooth dough, cover with plastic wrap and store in the refrigerator for about 10 hours.

The main dough materials: medium type dough, high flour, butter, sugar, salt, milk powder.

Cut the middle kind of dough into small pieces and put it in the bread machine, add high powder, milk powder, sugar, and water to start the bread machine for kneading.

When the flour forms a dough, add salt and continue to knead the dough.

When the dough becomes smooth and gluten, add butter softened at room temperature to continue kneading.

The butter slowly melts into the dough, and when the dough becomes smooth again and a complete and strong film can be pulled out, take the dough out and cover it with plastic wrap at room temperature.

When the dough has doubled its size, poke a small hole with your finger, and it will not shrink or collapse, indicating that the dough has been finished.

Vent the dough, divide into 3 equal parts, knead into a circle and let stand for 10 minutes.

Exhaust the air and knead it into a circle, put it in a small toast mold, and ferment in the oven until the mold is 9 minutes full. Preheat the oven to 175 degrees high and 185 degrees low.

Heat up to 175 degrees and lower to 185 degrees, in the middle of the oven, for 30 minutes, after baking, take it out and let it cool.

Tips:
1. The baking temperature should be set according to the characteristics of your own oven. I use the ACA North American oven.
2. The amount of water added should be controlled according to the water absorption of the flour, and a small amount of water should be added several times when adding water.
3. The dough is softer, the film forming speed is fast, and the finished product is also softer.
4. After the baking is completed, take out the toast and let it be warm before packaging.
