What the hell is a night stain? I didn't know it before. I believe many people haven't heard of it. Later I learned that it was the diving kimchi we often say.
Overnight pickles are very popular in Japan, and there are many varieties of pickles. The method is very simple. You only need to mix your favorite fruits and vegetables with good juices, and after a night of pickling, you can turn into an appetizer. It is very tasty and delicious. Refreshing, it is appetizer and meal in summer.

Overnight Pickles---assorted Kimchi

1. Prepare the necessary ingredients

2. Wash all kinds of vegetables and cut into small pieces

3. Put 4g of salt

4. Cover and marinate for about 1 hour after mixing well

5. Pour out the marinated water

6. Put vinegar, sugar, 10g salt and cold water into a bowl and stir well for later use

7. Take a slice of lemon and divide it into small pieces

8. Put the squeezed vegetables into the pickling jar

9. Pour the marinade

10. Cover with a heavy glass lid

11. Put on the dust cover and put it in the refrigerator overnight

12. You can enjoy it the next day. If you like, you can add some sesame oil and chili oil to make it more appetizing.

Tips:

1. Other containers can be used without pickling jars, but glassware is best
2. You can choose your favorite seasonal vegetables to make
3. The amount of vinegar and sugar can be adjusted according to your own taste
4. If you don’t have lemon or white wine, you don’t need to put it
5. Don't make too much at one time, it's best to eat it within 1-2 days, so that the nitrite is relatively low and relatively safe
