Pan-fried Eggplant

Remove the stems of the two eggplants, clean them, and cut them into even slices.

Add salt, flour, starch and water to an egg and mix into a paste
3.
The eggplant slices are evenly dipped in the paste, and the hot pot is added with oil for frying
4.
Fry until golden on both sides
5.
Cut garlic into the mince, add flavourful soy sauce and a little balsamic vinegar to make a juice
6.
