Peanut Butter Dried Fruit Beer Soft Ou Bun ~ Low Sugar, Vegetarian Oil and Egg Free Formula
1.
Prepare all ingredients
2.
Pour salt, sugar, yeast, water and beer into the bread bucket
3.
Then pour the flour in, then put it in the bread machine and knead the dough
4.
Pause after 15 minutes, add corn oil and continue to knead until smooth
5.
The kneaded dough can pull a smooth and transparent film, indicating a good recipe; in fact, to make this kind of soft European bag, no glove film is required
6.
Round the dough again, put it back into the bread bucket and close the lid, turn on the fermentation function of the bread machine to assist fermentation
7.
When fermented to 1.5~2 times larger, poke the hole with your hand and do not retract, indicating that the fermentation is OK
8.
Take out the dough and place it on the chopping board and press it to exhaust. First press 150 g/portion and divide into 3 portions; then divide the remaining dough into 4 portions, roll them into balls, cover with plastic wrap, and relax for 15 minutes
9.
Take a large dough, flatten it, and roll it out into a rectangular piece of dough
10.
Turn it over, smear the peanut butter in the middle, put almonds and raisins, thin the bottom edge for easy closing
11.
Roll up into a roll from top to bottom, pinch tightly at the end, and place it down
12.
After rolling 3 large doughs, place them in the baguette mold
13.
Put the mold in the oven, put a bowl of hot water under it, increase the humidity, and then adjust the temperature to 38 degrees for the second fermentation
14.
Roll out the remaining 4 small doughs, spread peanut butter, put almonds and raisins, and roll them into rolls
15.
Put it in a golden non-stick baking dish, and ferment at room temperature in a microwave oven, at a slower speed, just enough to stagger the baking time with the first dish of bread
16.
When the bread dough is fermented to 1.5 times the original volume, take out and sift a little flour, cut with a blade; at the same time, press the heat to 200 degrees and lower the heat to 190 degrees to preheat the oven
17.
Middle layer of the oven: the temperature remains the same, and bake for 20-22 minutes; each oven is different, so you need to observe more in the middle
18.
Bake until the surface is golden brown, shake the mold, shake out the heat inside, and then put it on the grill to let cool
Tips:
1. The original beer formula is 300 grams, I only put 280 grams, because the water absorption of the flour is different, the amount of liquid required will be different, you can adjust it yourself.
2. My family's diet likes less oil and less sugar, so I cut the sugar by half; if you like the sweet taste, you can put it normally at 40 grams, and the overall effect of the bread will be better.
3. This is the formula of beer soft European bag. Because beer itself is fermented food, it tastes soft and delicious; of course, it can also be replaced with water or milk, but the taste will naturally be different.
