I have eaten a lot of carrot cake. Have you tried it? I ate it for the first time. It is really special. The peanuts and the carrot cake are sweet. They pair well.
The other day I saw someone eating carrot cake, and suddenly I wanted to eat it. Now there are a lot of radishes, and my mother-in-law also dried some bacon by herself, with all the ingredients, and started making it. My mother-in-law taught me this method. I don’t know how to make cakes. My mother-in-law will make a lot of cakes. I plan to make taro cakes next time, because now that we have harvested taro, I have a lot of them, haha.
My mother-in-law likes to mix peanuts in for steaming. My father-in-law has no teeth and can't eat the hard half. I wondered if it would be more special to break the peanuts and spread them on top. Looks like eating pizza, haha.

Peanut Carrot Cake

1. Soak the mushrooms in advance.

2. Peel the bacon and soak it in warm water.

3. Cut the bacon into small cubes and chop the mushrooms.

4. Peel the radish.

5. Plane into filaments.

6. Put the bacon and shiitake mushrooms into the pan and fry until fragrant, set aside.

7. Pour the radish into the pot and add a piece of rock sugar to cook together.

8. Add pepper and salt after cooking.

9. Stir rice noodles with appropriate amount of water to form a thicker paste.

10. Pour the fried bacon into the radish and mix well.

11. Pour the rice milk into the radish paste and stir.

12. Stir it into a thick radish cake paste and turn off the heat.

13. Spread tin foil on the cake mold, compact the carrot cake, and steam it on high heat for 1 hour.

14. Grease the pizza plate and press the carrot cake on the plate. Steamed on high fire for half an hour.

15. Sauté peanuts over low heat until fragrant.

16. Go to the clothes cooking machine and break it.

17. Spread the ground peanuts on the carrot cake and it's OK.

Tips:

1. Add some sugar and pepper when cooking the radish to remove the astringent taste of the radish.
2. The steaming time of the radish cake depends on the thickness of the radish cake. I personally think that it is better to be thinner, the thickness of the pizza plate is just right, and it does not need to be steamed for too long.
