Peanut Fish

Soak the dried fish in clean water for more than half an hour. When the dried fish becomes soft, remove the dried fish and set aside.

Pour the salad oil in the pan and fry the peanuts over a low heat until the red skin is slightly cracked and the color becomes dark red and shiny. Control the oil and remove it for later use.

Prepare the right amount of minced garlic and chopped shallots. It is especially easy to peel the garlic in clean water.

Pour the bottom oil into the pot, and fry the dried fish on a low fire for about 2 minutes. The dried fish becomes a little curly and golden brown.

Then make a hot pot, heat a little, add the chopped garlic, chopped chives, and sliced peppers to sauté. Then add peanuts and small fish, stir fry, add a small amount of cooking wine, light soy sauce and sugar. Dried fish itself has a salty taste, so just don't put salt in it. It's best to sprinkle a little cooked white sesame seeds on it before serving.
