Traditional peach shortcakes are made with lard. Modern people pursue health. Therefore, vegetable oil (salad oil, corn oil, etc.) is used instead of lard. When choosing vegetable oil, choose colorless, tasteless, light-colored, such as sunflower seeds. Oil, corn oil, olive oil, etc., do not use peanut oil for a strong taste. This peanut shortbread has a crisp taste and moderate sweetness.

Peanut Shortbread

1. Put the peanuts in the middle of the oven, and bake for about 20 minutes at 140 degrees

2. After the peanuts are cooled, remove the red clothes, and then use a food processor to grind them into peanut powder for later use

3. Get all the materials ready

4. Pour the egg liquid, sugar, salt and corn oil into a basin and stir evenly

5. Brush in the mixed low-gluten flour and baking soda, mix well with a rubber spatula

6. Then add the ground peanut powder and mix evenly with a rubber spatula

7. Knead the dough with your hands. As shown

8. Divide the dough into 36 small balls and place them in a baking tray. (The black baking pan needs to be lined with greased paper)

9. Press your hand slightly in the middle of the small ball

10. Brush the surface with egg wash, and put a small peanut kernel in the middle

11. Place the baking pan in the middle of the preheated oven. Lower the heat to 170 degrees above and bake for 15-20 minutes

Tips:

1. When baking, you need to wait by the side to avoid baking;
2. As the temperature difference between different oven brands is also different, please adjust appropriately according to the temperament of your own oven;
3. The biscuits are packaged after being cooled slightly to avoid regaining moisture.
