Penguin Buns
1.
Melt the yeast with warm water and pour it into the mixing bowl of the cook machine.
2.
Add sugar, milk powder and flour.
3.
The mixing bowl is installed on the cook machine and covered with a splash-proof cover.
4.
Choose the 1st gear to mix for about 40 seconds, and then use the 2nd gear to mix for about 5 minutes to form a smooth dough.
5.
Take 30 grams of dough and add appropriate amount of bamboo charcoal powder to make a black dough, and take 10 grams of dough and add red yeast rice powder to make a red dough.
6.
Cover the bowl with plastic wrap, and leave the dough twice as large at room temperature (about 50 minutes)
7.
The small dough will rise for about 10 minutes. Roll out the black dough into a rectangular shape. Cut into a trapezoid as shown in the figure. One side of the trapezoid is very short.
8.
In addition, use a round piping mouth to print a circle as the eye, and use the larger end to print the circle as well, and roll it out as the forelimb.
9.
Make a small portion of the red dough, round it, and then use a toothpick to press a mark in the middle to make a mouth. These finished parts must be covered with plastic wrap to prevent air drying.
10.
At this time, the white dough has also been fermented. Take out the dough and exhaust. This exhausting effort cannot be sloppy. It is important that the finished product is not smooth. I kneaded it for a few minutes. Then divide the dough into 35 g/piece doughs.
11.
Round the steamed buns, place them on oiled paper, and place them in a steamer. Take out one after making one, and stretch the black trapezoidal dough from the middle part of the circle all the way back. Put the eyes on, and put the forelegs on both sides. Place it as shown in the figure, so that it can be dipped in a little water to make it more secure.
12.
Just stick the mouth again. Ferment for 20-30 minutes in a warm place.
13.
After the water is boiled, steam it in a pot. Turn to medium-low heat and steam for 13 minutes. Turn off the heat and continue to simmer for 3 minutes before uncovering.

The amount of water and fermentation time are for reference only.
