Pickled Fresh

A small package of 250 grams of bacon.

Cut the bacon into pieces, add ginger slices and cook for about 5 minutes, first remove some of the salt in the bacon.

Cut the fresh meat into strips, blanch the green onion and ginger in a pot under cold water, rinse and set aside.

Cut fresh bamboo shoots into pieces with a hob and blanch them to remove the astringency.

Put all the ingredients into the pot, add boiling water, a small amount of cooking wine, and simmer for one hour on low heat. Bacon is very salty, so add salt as appropriate.

Tips:
Before stewing in the pot, all the ingredients are blanched separately to remove the peculiar smell. Chicken essence and monosodium glutamate are not added when stewing, which fully reflects the deliciousness of the ingredients.
