Pigtail Braised Kidney Beans

1. Wash pig tails with water;

2. Heat oil, add rock sugar and fry until the color darkens;

3. Pour in the pigtails and ginger slices and fry until they are colored;

4. Add light soy sauce, dark soy sauce, and stir well;

5. Add the kidney beans soaked for three hours in advance and sauté slightly;

6. Transfer to a casserole, put in water, boil on high heat and turn to low heat, and simmer for 50 minutes;

7. Simmer until the juice is almost dry, add salt;

8. Let it simmer for another ten minutes.
