Pigtail Braised Kidney Beans

Wash pig tails with water;

Heat oil, add rock sugar and fry until the color darkens;

Pour in the pigtails and ginger slices and fry until they are colored;

Add light soy sauce, dark soy sauce, and stir well;

Add the kidney beans soaked for three hours in advance and sauté slightly;

Transfer to a casserole, put in water, boil on high heat and turn to low heat, and simmer for 50 minutes;

Simmer until the juice is almost dry, add salt;

Let it simmer for another ten minutes.
