Pineapple Omelet Rice

Mix two eggs with a little salt and two spoons of water starch. The purpose of adding water starch is to increase the toughness and make the egg skin difficult to break.

Heat the pan on a low heat, pour thin oil into the pan and turn the pan to spread the egg liquid evenly on the bottom of the pan, and fry into a round omelet. Without turning over, the surface is solidified and ready to be taken out of the pan.

Cut the quiche into index finger-wide strips.

The cucumber is sliced vertically with a scraper, and cut into strips the width of your index finger.

Weave the egg strips and cucumber strips into an omelet by weaving a flower basket. As shown in the figure, lift the egg strips every other time and then add the cucumber strips. You can see the color of the side of the uncovered omelet against the bottom of the pan. That's why Don't turn over when making omelets. Make sure that the color of the surface is beautiful. If you turn it over, there will be markings on the bottom of the pan.

Then put the egg sticks down, stagger the upper row and continue to lift the cucumbers every other row.

The rice is fried overnight with an egg, chopped green onion and a little salt.

Remove the tendons on both sides of snow peas, wash and blanch them with boiling water, then cool and control dry water. Place them on a plate in the shape of pineapple leaves. When blanching snow peas, add some salt and oil to the water to make the blanched color emerald green.

Put the fried rice in a plate and arrange it into a pineapple shape with a spoon, narrow the top and wide at the bottom.

Then cover the prepared omelet on the rice. When moving the omelet, be careful not to loosen it. I used two kitchen knives to insert under the egg skin to support and cover it on the fried rice.
