Poached Pork Slices

1. Cut the tenderloin into thin slices, add a little salt, starch, cooking wine and egg white, and marinate for 20 minutes

2. Cut fat into small cubes for later use

3. Bring water to a boil in a pot, add small rapeseed and a little salt and blanch until it is broken

4. Blanch the rapeseed in cold water and squeeze out the water and place it in a large bowl

5. Add oil to the pan and heat up, add the marinated meat slices and stir-fry them before serving. (The picture shows the fried meat is not cooked yet)

6. Add a little oil in another pot and add diced fat to force out the fat

7. Add the pepper and sauté fragrant, stir-fry the red oil in Xia Pixian bean paste, add broth or water to boil

8. Add the fried pork and cook for a while, then pour it into a bowl with greens

9. Cut dried chili into sections, mince garlic and put white sesame seeds in a bowl

10. In another pot, add oil and cook until it is boiling hot, then pour it on top.
