Mix 4 egg yolks and 35g sugar in a boiling pot (don't turn on the fire yet!), beat the egg yolk with a whisk until the egg yolk slightly changes color, and the two are evenly mixed. Pour in all the milk, cream, salt and egg yolk and mix well.

Stir while heating on a low fire. Turn off the heat as soon as bubbles start to boil around the pot. Pour into a large bowl, bring a bowl and place in cold water to cool. After cooling, put it in the refrigerator for 1-2 hours.

Meringue: 4 egg whites + 1 scoop of sugar to beat. Just send it until the picture can just stand up.

Mix the meringue and the cooled egg yolk completely. (You can add wine at this step) Put it in the refrigerator overnight.

1. Regarding the safety of eggs: When making eggnog, the most worrying thing is that salmonella in the eggs will be infected. If you have this concern, you can blanch the eggs in hot water for 10 seconds, and then pour the hot water out. If the time is too long, the egg whites will be cooked. Like in my picture, the egg whites have a hint of whitishness, which means they have been scalded. Don't worry about this level, it will not affect the flow of the meringue. This method can also be used to make other dishes that use raw eggs as ingredients, such as mayonnaise. If the egg is not damaged, the egg shell is most likely to carry bacteria. It can be sterilized by scalding it. This step can be omitted, so I did not put it in the production process.
2. The yolk milk in process 1. must be mixed well before boiling! ! ! Very important! Stirring should be kept during the cooking process to prevent muddy bottom. Just turn off the heat as soon as it is bubbling. If it takes too long to cook, it will become a milk paste!
3. A pinch of salt: just pinch a little bit with two fingers (I said in the past), it's really rare. You can count how many grains of salt there are. A pinch of salt can make the sweetness in the dessert less greasy. This is why salt appears in many dessert recipes.
4. Adding meringue will make the eggnog thicker, if you don't like it, it is okay to not add it.

The part that can be changed in the recipe: the amount of sugar can be increased or decreased; the amount of wine can be increased or decreased; the amount of nutmeg powder can be increased or decreased or replaced with cinnamon powder (if you don’t like it, you can leave it alone); meringue can be omitted put.
